January Blahs

We have the after-the-holidays, mid-winter blahs around here. Nothing much is going on and everyone is suffering from mountain cedar allergy.

On the upside, the weather has been beautiful. Blue skies, sunshine and temps in the 70s. Tomorrow it's supposed to be nearly 80°. It will be beautiful for the annual MLK March. The march in San Antonio is always one of the biggest in the country. Since both Josh and Ron will be off work, we're planning to grill hamburgers and hot dogs.

I think I'll make these apple dumplings for dessert. My friend Debbie gave me the recipe a couple of years ago, and they are easy and delicious.

Apple Dumplings

2 granny smith apples (cut each into 8 wedges)

2 pkgs. crescent rolls (8 in package)

Put 1 apple wedge into each crescent roll. Roll up to cover from small end. Next, mix 1 ½ sticks butter and 1 ½ C sugar, plus 2 t cinnamon and bring to a boil. Pour over dumplings. Pour 1 can of Sprite (12 oz) over sides and middle of crescents, NOT over crescent dumplings. Bake at 350°F for 45 minutes.

(You can use ginger ale, 7-up or Mountain Dew instead of Sprite if you like. Don't use diet soda).
